Brewing Green Tea At Room Temperature - Moon Tea

Julian, I am a 'new' green tea lover and I really enjoy your newsletter.


I often 'brew' my green tea in filtered room-temperature water, in a closed glass jar, in the dark for about 4 hours to about 8 hours (overnight). The taste is great and the color is green-yellow to green.

I got this method from my grandfather who would put his black tea in a large teapot and leave it there for the day, drinking some whenever he wanted.

I believe that EGCG is only stable in water for 7 hours. I would avoid this method if you want to full benefits of green tea. If the only thing you care about is taste... then... sure.
